Anyone here like salmon? How do you like to cook it? I know smoking it is popular, but I always hated it, which is weird because I like raw salmon just fine.

My dad gets salmon steaks and purposefully burns the shit out of one side while leaving the other completely raw. He says it gives him the best of both worlds, being able to eat a grilled salmon and sushi in the same bite.

usually just grill or pan fry it. bit of lemon juice, salt and pepper, maybe some dill or other herbs. that's about it really. keep it simple, you don't need to do a whole lot with it.

Fry it in some butter. Put a sprig of rosemary on top and baste it with the fats.
Save the fat in the pan to fry eggs in the next day then top with dill.

i also prefer raw salmon but my second favorite method is probably en papillote. pretty much comes out perfect every time as long as you get the parchment seal right. can go pretty much any direction in terms of cuisine and flavors but mediterranean and japanese usually perform the best.

So, so many ways. Skin-on side of salmon? Shioyaki.
Skin-off? Teriyaki.
Steaks? Plan fried in brown butter then the butter in the pan made into a sauce with lemon, mustard and dill.
Hot-smoked? Soup with onion, yellow split peas and dill.
Cold-smoked? Lox and schmear with bagels (I use frozen soft pretzels but without the salt because supermarket bagels are fucking trash).
Raw? Hwe dup bap or chirashi.
The bag of cheap salmon leftovers the fishmonger sells me for $1/lb? Jerky (you will never realise just how fatty a fish salmon is until you put that shit through a dehydrator).
Canned/pouched? Topping for salad.
Whole? Roasted (or cooked over flame outside if it's s particularly large fish).

I tried frying eggs in salmon fat once and didn't like how it tasted which surprised me because seafood is the most common meat in my diet and fatty fish are among my favorite foods. It goes seafood, pork, tofu, chicken, beef, lamb, goat, veal other animals, in that order.

I do something similar. I don't even cook salmon all that often because it's simply not worth the price, but the rare occasion I do get it, I just sear the shit out of the skin side and let the steam cook the top part. It comes out almost raw in the middle and the skin is crazy crispy.

How much is it where you are? $6/lb here for steak but if you get it at stupid people stores, it's $5 per portion (which is a mere 5oz IE $16/lb)
