We already knew from the Christmas specials and future episodes that he'd go back to being evil eventually. According to Milo Murphy's Law, he also turns good a few times in the future.

Yes man, good Doof is boring, and it's not like he's actually "kill everyone" evil, he's "try to take over and fail, and be as petty as possible" evil, he's harmless, making him good just makes him into a wacky guy, evil Doof is a more interesting nuanced character.
I never really cared for it in the first place really since that whole episode really seemed to unwind all of Vanessa's character development for a goal that she had never once expressed interest in before that point.
Last Day of Summer and Act Your Age both being soft retconned out of existence wouldn't bother me in the least.

The idea of having a set future for a show that clearly wants to keep changing things in the present is kind of dumb.

Agreed. On both points really. I just don't like time skip episodes unless it's at the end and the point with Vanessa was just weird. Not even a hint of it before hand but it was apparently a big enough deal she was going to move out of Doofenshmirtz's place just doesn't sit right.
