It's a love story, probably one of the best ones ever told. And it's great because it ends in disaster. The lessons from Evangelion are that we will never be able to truly understand each other, and that to be an individual is to be alone. But without individualism and lonesomeness, we'd have no concept of friendship, love and intimacy. No one will ever understand what it's like to be you, no one will ever know exactly who you are, but you can still try to connect. It's about the temptation to cut yourself off from the world and how selfish it is.
Evangelion is actually very similar to Hayao Miyazaki's films, but Anno is more interested in exploring the sexual aspects. But in terms of philosophy and themes, they're quite aligned. Evangelion is about people inspiring each other to live.

Asuka and Shinji's codependency is absolutely integral to the OG Evangelion story. It's the reason why everything spirals out of control in the final act. Their quiet moment of connection and understanding at the end of EoE ties things up in a neat bow.
I haven't watched the Rebuilds so I won't comment on them.
