Tai Lung's backstory is revealed after this scene. He's a completely mysterious character at this point, which is a reason why this scene is so awesome

They made a different movie for the sequel.

This scene is a letdown. Just when they finally drop the casual talk and start going to where we want to (heart-to-heart talk), they get interrupted and then don't have another conversation for the rest of the movie

It's quite obvious that Reiff and Voris didn't write the storylines of the sequels or created the new characters introduced in them (Shen, Soothsayer, Kai, Zhen, etc)
