Why? If anythign he is supposed to be the male heir and a copy of his father.
And all in all, there is barely any actual "role swap" here. Dipper still acts like Dipper, Pacifica still fulfil a similar role. A roleswap is much more than just recoloring characters, specially because being BIG MONEY is a major trait from the Northwests.
A true roleswap would be closer to the Reverse Falls AU. The Pine Twins would be minor antagonists that later join the heroes, fem Dipper would have as much presence in the plot as Pacifica and as many episodes dedicated to her.
The proper way to do it would have the Pines either be from Gravitty Falls (like in reveser Falls) OR have them be smug californians spending vacation there. I'd say to keep fem Dipper's interest for the supernatural tho - the difference is that she is rich and tried to shun that away because it wasn't "cool". If she is mean like Pacifica, she and Mabel probably fell apart on the last year or so, and Mabel is feeling lonely.
Pacifica is from a broke home, parents divorcing and he tries to act "cool ad trendy" despite that. I guess Mabel would try to flirt with him right away, but eventually they set into being friends. Issue is, there is nobody on this swap that can move the plot foward as either fem Dipper has the diary but isn't a protagonist - or male Pacifica has the diary, but has no reason to investigate it.
