In the movies, we see that they:
1) Fear death, scream, call for help;
2) Talk to each other, smile, articulate in the background;
3) Help the wounded on the battlefield, other clones pay attention to the wounded and can get distracted from a firefight;
4) They are good friends with the Jedi, psychic mind readers, who trust them absolutely, are comfortable around them, and are not afraid to turn their back to them, have banter with them. So that means they are not some kind of evil psychopaths, who dream of killing them in front of their faces, because otherwise the Jedi would not trust them ever, and Obi-Wan would not be a friend with someone like that.
5) Have customized armor, various emblems on their helmets, starfighters.
Everything was there in Episode III. Lucas merely elaborated on that in Clone Wars, went far more in-depth than a movie would let him due to time and story constraints, and spend significantly more time on that over the course of many seasons.

I'm not saying they should be completely unfeeling and robotic. The hint of humanity is what makes an army of cloned humans meant solely for war disturbing and compelling. One of the most famous depictions of a clone trooper is the 501st Journal and they have tons of emotions there. The problem is that Filoni made them so human they order 66 isn't possible anymore. That's the point. Order 66 was always programmed secret directive and never free will. Lucas has always said that, and that's what Revenge of the Sith very clearly depicted. It was never about "saving Galactic Republic." That's your headcanon, or EU fanfiction, where they could not even agree on what Order 66 was.

The goal of the attack was to capture the Chancellor, not Courscant itself. So fleeing was quite literally already part of the plan. Grevious also still very clearly intended to fight Windu, pulling out his lightsabers, before having his lungs crushed. He disengaged from the fight the moment he realized that Windu was a cut above the rest and that he likely wouldn't win a fight.
