Pacific Islanders adapted to being able to store more fat for long sea voyages. Even though the foods they eat traditionally are pretty much huge portions of carbs, like sweet potatoes, yams, and plantains, their bodies weren't built for the modern Western diet.

Because of the art style? Most characters in Lilo & Stitch have potato noses and are big and fat. The ones who don't are literal aliens based on noodly animals or a skinny ginger with a nose that looks like a beak. Lilo and the other girls in the movie are very young to begin with (5/6 years old) and they're stylized to look like babies with long hair. Babies tend to be fat and weird looking, especially if you slap a wig and a clown's nose on them.
