Remy was the one doing all the work and Linguini had no talent as a chef. Even when he couldn't tell people it was a rat doing it all, he still needed to realise he was just the face for someone else's talent.

Obviously Linguine for allowing a rat into the kitchen, being so oblivious he thinks he's a good cook, and generally pursuing a stupid dream he had built zero skill towards.
Reminder that this whole scheme falls apart inside 2 years when Remy dies, and that rats can't be housebroken so Luigi's head is covered in rat shit after every shift.
Brad Bird deserves credit for many things about Ratatouille, but the character designs aren't one of them. Those were created when Jan Pinkava was the director.
