Pen wanted AT to be more of an ensemble with PB, Marceline, Finn and Jake. The first episode they made was a sitcom-esque spaghetti date with Finn and Bubblegum. CN scrapped it and asked them to make it more like the pilot, which resulted in Enchiridion. CN saw AT as a buddy-duo comedy (always), which meant minimizing the roles of PB and Marceline. Also why they don't seriously interact with each other until season 3.

There was clearly some mandate that Finn and Jake appear in every single episode. Even episodes they had no business in, like Thank You, I Remember You, and Sky Witch. Or Jake in It Came From the Nightosphere. That didn't change until late s5/s6. The first episode Finn does not appear in at all, excluding F+C episodes, was Princess Day, the 170th episode.

Holly Jolly is a pivotal episode lore-wise, but I think Incendium is a better marker for the end/beginning of eras. Season 4 is when they started experimenting more, which reached its apex with season 6. I view them collectively as a 'middle' transitionary period. If I were to split up that up I'd go s4-5A / 5B - s6. Frost and Fire being the turning point. Season 7 marked a shift towards more concentrated story arcs with the miniseries/fern/gumbald, and Finn getting the past the worst of his puberty driven angst. Islands to CAWM is too short to be an era imo, and not that different from s7 to Islands tone-wise.

For me:
s1-s3 = early era
s4-s6 = middle era
s7-s10 = late era
DL/F+C = post-show era
