Well first off Steven Universe's Ending, either of them, are constantly made fun of.
But for why Star's ending is remembered worse it's because the swerve more massive. Like Steven Universe is bad in a constant way, Star was bad in a way that was different from the rest of the show.

I think it was an issue of the showrunner not being in charge enough or controlling the storyboarders. They all did their own thing and constantly contradicted each other.
