>How do you balance a giant/growing character?
Well, assuming that they need to shrink back down from time to time (either to eat or just because they can't keep up their transformation 24/7 or what have you) then that's a pretty big downside. Her enemies can just attack her during her cooldown period or in a place where she can't safely grow, like in her home.
If your supervillains aren't murderers and are more along the lines of bank robbers than having to avoid killing people would also limit what she can do a lot. She would have to modulate her strength a lot, watch her step, etc. to avoid splattering people (this isn't even accounting for the inevitable property damage). The collateral damage might result in more heat coming down on her and her bf than what they might have otherwise attracted, basically.
Aside from that she'd also be a pretty big target; any superheroes are probably going to gun it for her immediately, and while mundane weapons might not scratch her you don't really have to worry about aiming your laser vision or whatever when your target is the size of a building.
Overall unless you want to give her physiological weaknesses like being extra slow as a giantess then you're probably better off leaning more towards social 'weaknesses' that arise from the nature of how her powers function and how other people respond to them, rather than saying she's innately weak to extreme temperatures or a glowing rock or something.
