I think it's two things
1) KOTH is undoubtedly more popular than B&B, and popularity really works against you when it comes to creative works. It's a big opportunity for the higher ups to make money, and so they start fiddling with things to play it safe or have even wider, more modern appeal. Hulu was advertising the shit out of this as a big thing, so they were absolutely keen on getting a return on their investment, so I can't see the staff being allowed to just make something funny
2) The staff was also just worse. B&B had writers that worked on Fraiser, prime era Futurama, some B&B episodes in the 90s, and so on. KOTH got writers from The Big Bang Theory, Rick and Morty spinoffs, Jimmy Kimmel, and Velma.
