When Marvel and DC hire celebrities to "write" comics for them how much do they actually do?

More than you'll ever do.

It's mostly assumed that they're written by ghost writers particularly if it's a mini series. Probably just have some ideas or themes that they tell to the "co-writer" which is then translated into a functional story. Writing comic books is surprisingly involved because you have to coordinate with the artist while dealing with editorial. This is time that most working celebs, particularly if they have to do filming, don't have
The only case where I know the celeb actually wrote the comics was Bemis and it was so shit.

depends
some are just idea guys and just give the story or plot beats for their co-writer (who writes comics) to adapt
others are more heavily involved and end up writing the comic entirely

In Iman's case she was involved a lot with her Ms. Marvel comics, she was in discussions with other writers in the X-Office and she came up with several of the plot beats (like the dream sequences with Doctor Surfer in the first miniseries)
