Gambit's powers don't line up compared to Cyclops and Vulcan who are both "absorb energy, release as a different form of energy" types.
Polaris barely does shit, so it doesn't change much to delete her.
Hank is expendable, so he works better for "evil robot's creator" since the other big brain guys like Mr. Fantastic or Iron Man making Ultron would damage their reputations too much.
Namor already moved on and even got his own stable of love interests, several of which died. Namor/Sue is just a 60s triangle pandering.
Marvel fucked up current Loki anyway so it doesn't really matter.
She's carried entirely by being Gwen.

Ultron is inherently dependant on Hank to work as a character, without that connection always lingering in his personality, backstory and his connection to the Avengers as enemies then he doesn't work as the MCU showed in fumbling his vital visual and characterisation elements.
