It's a zoo and the hippo was probably hand reared since birth so it's used to human interaction and lacks the instinct to protect its territory like it would in the wild. The chances of it snapping and going primal aren't zero, but it's not likely to happen.
You see this all the time where caretakers at zoos/sanctuaries will be posted up with fully grown lions, tigers, hippos, etc that would kill them the shit out of them in the wild but they're used to them since they've been around them since they were young.
