Well for the IG it was because it didn't matter in the slightest. They had Darkseid just out cosmology Thanos in perhaps the most cut and dry example in the show.
As for Sonic characters, their Super forms are iconic, so they get the Emeralds as presumed equipment even though they are hardly ever standard.
For VS Mario characters that works since they want to have the interplay between power ups.
For other match ups it is more contentious, since they are generally the only factor that makes the argument worth having. But if Death Battle and others just said Super Sonic vs Goku, then it would probably come off as a lot lamer as a result.
That's also why Hulkzilla wasn't really about Godzilla, but rather Godzilla Ultima specifically. But still the match up is sold as Hulk vs Godzilla (Marvel Comics vs Godzilla) because Hulk vs Godzilla Ultima (Marvel Comics vs Godzilla Singular Point) is worse for the algo.

It doesn't seemingly manifest in a singular way based on flash backs, but when Gomah uses it it enhances both his height, physique, magical abilities, gives him passive regeneration and rejuvenation, and the eye itself has some automatic abilities.
It was not possible for SSJ4 Adult Goku to kill Gomah, but the removal ritual is just getting slapped on the back of the head three times.
Power scale in Daima is a bit weird, but it seems at least that the Tamaghanis were as strong as Pure Buu (different from Kid Buu, since Kid Buu still had Grand Supreme Kai's power).

We don't have a clear idea of how strong Gomah is in base, but he found Majin Buu terrifying.

I don't think Solidus has any notable movement feats like the falling rubble one, but he dodges Metal Gear RAY machine gunfire in close-quarters. Can't find good irl speed calcs for machine guns but I think tank shells are somewhat faster than bullets, though. You could argue that since RAY is robotic (it was the unmanned model) its movements should be easier to predict than a human's.
Can't get any notable Vamp speed feats besides dodging bullets but you chalk that Fortune scene to Vamp not paying attention / expecting that to happen. Picrel says split second, is this higher or lesser than the reaction time needed to dodge bullets / cut the tank shell?

I would argue that the AI was malfunctioning so the RAYs were handicapped in some capacity. You can see in that same cutscene that Solidus is moving deftly rather than outpacing bullets; Bradley has a much better feat of running AT bullets and blocking all of them without moving his head or eyes and the tank shell is just monstrous because he sliced it into two perfect halves that didn't lose speed as they moved past him. I'm willing to concede that Vamp was caught off guard, but the fact that he needed to aimdodge handgun bullets also means he's not particularly fast compared to what Bradley did, in a much more fast paced sequence at that. What's impressive about Bradley's hopscotching feat isn't so much his reaction time as much as his agility, creativity and insane reading ability. No one in Metal Gear Solid could have done that

You can just try the old platformer one for the sake of feeling that ridiculous old-timey game design, then pick up whatever latest release/edition of NG1 there is on your preferred console or rig and go from there.
