I don't see Amy as a thirsty violent yandere, but more relevantly I don't see Minnie as a Peach either. She's closer to Daisy in that comparison. There's a streak of tomboy, generated through simply having to be willing to take part in action to be part of stories with Mickey, that then gets sort of "covered" by being "prim and proper". Not quite this far, but basically "a tomboy in denial who insists she's a proper lady". Which is also how I'd describe Amy, hence the comparison.
