I think a big part of why the movie is doing so well is because Ufotable actually knows to make really cinematic animation thanks to their unique in-house knowledge of being able to composit 2D and 3D elements together.

Like the experience alone of seeing the Infinity Fortress and the way it's animated/directed on the big screen is a selling point on its own (on top of being the finale to the anime series) compared to say, Chainsaw Man Reze's Arc more standard animation.

This is correct. But not just the "animation is for children" part. Hollywood was built on convincing people that movies were high entertainment and actors were celebrities that made movies worth watching (the big reason they insist on having celebrity voice actors for cartoons is to install the "mythology" of actors into children). Hollywood is full of old blood that took too long to realize trends were changing and modern audiences' tastes weren't compatible with the hollywood model.

The irony is now that anime is going mainstream, Hollywood are trying to figure out how to make anime more compatible with the Hollywood model and will inevitably strip out a lot of what makes it appealing.
