the butch lesbian is a product of decades of stereotyping of lesbians, the femme lesbian was a reaction to that stereotype for the same reason you mentioned, that a lot of lesbians look and dress like most other girls
but butch lesbians exist in real life, for the same reason that tomboys exist, some girls just like to look a bit more masculine
and for better or worse, the butch lesbian still lingers as a stereotype among the public, so it wouldnt really make sense to drop it altogether
from a visual standpoint, the butch x femme pairing works because they contrast each other
realism has nothing to do with it, its just good visual design to exaggerate the differences between two people and because humans have a socialized need to seek out opposite attracts
