>Memories of Boom Boom Mountain: Finn does everything he can to help everyone no matter how small their problem because he was helped when he was a baby.
>Ocean of Fear: Finn wants to conquer his fear of the ocean and he sort of does to save Jake.
>Dungeon: Finn ventures into a dungeon without Jake and they both realize they pretty much need each other.

Low stakes adventures are fun for a while, but eventually it gets stale. The best thing about Adventure Time was it wasn't just the same shit over and over, they were trying new shit constantly. Characters became more nuanced, the world and the lore was fleshed out. It became a more interesting show, while retaining its heart.
If it was just season 1&2 style episodes for 10+ seasons I don't think it would be remembered nearly as fondly as it is now.

Personally I'd disagree that taking itself more seriously, "raising the stakes", and "maturing" automatically makes it better and more interesting than before. They set out to make a fun cartoon about wacky D&D adventures, monster fighting action, wacky stuff happening, being a hero and kissing princesses and it had a cool whimsical fun magic atmosphere about it. Cool fun stuff happens because why not it's a cool fun kids show about colorful childlike imagination adventures. Needing to "grow up" and justify and explain everything while moving away from simple lighthearted fun because simple fun isn't "nuanced" takes away a lot of the magic in my eyes.
