You're definitely right, it's the same way as how The Flintstones are seen as blase or even lame when it was literally groundbreaking at the time. Even if you can tell the early seasons of the Simpsons were made during a different time in human culture and history, it feels wholly contemporary. Saturation of both it and the genre have completely shaped how we view that kind of TV today, meanwhile back when it was on the Tracy Ullman show an "Animation Domination" block of "adult" cartoons would have been completely unheard of.

Homer is the most notable character in the show which is why they play up his faults to some of the biggest extremes in Springfield. They WANT him to been seen as this super flawed fat, gluttonous, bald, lazy, low IQ retard because he's the face of the show.

This is why he always gets fat jokes and is seen eating out whole buffets even though there's plenty of fatter people in the town who don't get the same mockery for being fat. You might be getting confused because the Khan voice actor also played Cotton Hill who died in the show itself. Plus the actor for Dale Gribble died and got replaced by the former voice of Khan/Cotton so the original Khan voice actor isn't just alive, he's still on the King of the Hill payroll doing voices. This makes it even more obvious recasting Khan was just a decision due to this stupid "you can only voice characters based on your race" controversy that "The Problem With Apu" jumpstarted.
