Dont know shit about wood working so I need some help here.

I want to buy the table top on the left and wondered if I could sand it down and stain it with pigmented oil to get the coloring of the one on the right.
Its oak and was already treated with oil.

Any specials oils or treatments to consider?

Yeah you just need to decide what color you want and what you want to topcoat it with.
Pick a stain color, then decide if you want oil based varnish, lacquer, or a polyurethane (can be water based or oil based).
Go to the store and buy a small strip of whatever wood it is and buy a couple stains and do some color tests. It looks like a walnut color so look for stains like that.
