How would you build one? I am comtemplating getting a 30k€ plot of land in the middle of nowhere and building my dream DIY anarchy shed. Fuck everyone.

I'd decide on what type of brewing set up you want, then design the space around it. E.g., electric vs gas, how many fermenters, etc.

Easy mode style homes, but if you want a shed, it would be frame built. plywood walls + wrap, bitumen shingles and insulation if it's cold.
If you're doing indoor growing, you need to account for mold and mildew from humidity so usually it's best to get a pvc grow shed inside another shed to separate the elements from the inside and out. A septic tank and pump to generate pressure in the plumbing, which would require storing water in an elevated position. Electrical systems would require a charge controller and a inverter/transformer box, plus some batteries.

I have a similar dream, but want to build one along an unbuildable area where storm surges can reach at least 10 feet and winds of 140 mph.

My idea would require renting a truck with a 24 foot bed to lay up 34 foot structural timber enough for a 700 square foot deck and studio apartment, and a pile driver rental which would cost like 2,000$ for a five day period to get everything on site and then drive the piles into sand 26 feet or so. (5-7,000$) in total. Also all the electrical equipment has to be marine grade and stored in the attic.

It's good to dream, OP, but where would you plan to live; montana, idaho, or wyoming?

Well, being that I live in Germany I decided somewhere in the south near Bavaria / Baden-Würtemberg. Plots are cheap and there are enough "bumfuck nowhere" regions so I can live far off civilization.

Essentially ye, I'd build the typical American cardboard box with drywall and insulation consisting of fiber glass. Completely unusual in Europe, but it's cheap as fuck and easy to install yourself.

That's the main issue with living off-grid, I hope sodium-ion batteries get cheap enough to build big ass battery systems that can sustain me until the sun rises again :D

To be honest your plan sounds way cooler and complicated than mine, but doable if you bring the required amount of spite with you
