I thought the japanese were mostly yamato though? if I see a selection of asian faces I'm almost always able to distinguish the japanese people, and I don't even know why

Yamato is the blanket term for the Japanese ethnic group but it's down to what that's composed of. Modern Japanese people are very close to Koreans but have a notable chunk of indigenous Jomon ancestry (about 10%) along with some random West Eurasian and Pacific Islander, and it's just enough to make them distinct. Obviously just growing up in a different environment and confirming to different fashon standards etc. is a big part too though.
