I haven't seen the bouncers you're talking about, but I'm assuming they weren't just tall and flabby fat, and were built enough to be intimidating because of their apparent muscular strength, and not because of their weight alone.
If a fat but muscular guy lost weight he'd still be intimidating, but if the fat with no muscle guy lost weight he'd lose all the intimidation his fat gave him.
So my view is that being a big fat guy isn't what's intimidating. It's being a big strong guy that intimidates you, with the fat being a potential added bonus, but not the main source of intimidation.
