I keep it under 25g per day personally, and its only because I want my supplements to actually work, getting 10g of fat in the form of walnuts in the morning and 10-15 g in my evening meal from stuff like tofu/chickenbreast/shrimps/chickpeas etc

I dunno, I'm not checking blood sugar regularly at the moment. 300g in two meals isn't anything crazy though, it's maybe 60g of carbs per meal.

the problem is you need a lot of fat for vitamin absorption and hormone making look for example at vitamin d and omega 3 absorption with and without a high fat meal
