Conventional wisdom this, myopic evolutionary reasoning that. RTFM. Even American Heart Association and other inert institutions have updated their guidleness with more modern understanding. None is safe from atherosclerosis.

Epidemology doesn't show meaningful correlation between saturated fat consumption, or red meat consumption and cardiac events. A small subset of people people have unfortunate genetics, where saturated fat does substantially increase plague build-up. Many of those people croak in 40s and 50s.
There are other factors that could be at play: chronic inflammation, calcification from excess calcium and vitamin D and lack of K2. Or chronically elevated BP.

First of all clogging of arteries is slow process that takes decades and begins at birth. Just because you changed your diet at 30 doesn't mean the damage is gone.

Cardio helps, good metabolic health helps, but the only way to stop the build up is to make the body cease producing the type of cholesterol-carrying protein ApoB that clogs the arteries and that can only be done pharmacologically.

Genetics are a contributory factor, the direct cause is elevated cholesterol, it's the ONLY direct risk factor. Unless you have a genetic condition that elevates your LDL to well over 100 ng/dl regardless of what you eat it's not genetic. There are people with familial hypercholesterolemia but all they have to do is just reduce dietary cholesterol for the most part. Have you guys ever heard of "blue zones?" They're areas in the world where there's high concentrations of people 100+. One thing you see there is they never stop moving (exercising to live.) E.g. one of them is a village that is incredibly mountainous and the people move hills constantly to get water + food. You literally can't get fat if you're forced to exercise hard to live. While the diets of these people are incredibly diverse. Whatever seasonal veges, herbs, plants, meats, fish, wine, teas... whatever.

You see -- modern nutrition is at the level where it's like... you need xyz vitamins, minerals, protein, carbs, bla bla bla. But it doesn't account for the myriad of other beneficial chemicals and even life forms that are in our diet. Like antioxidants, phytonutrients, flavonoids, and bacteria for the gut. Its like those disgusting, mono-culture forests you see with no life in them. That's kind of a simplification for having limited diets towards what happens to intestinal bacteria.

It is not as if you eat saturated fat and it goes straight to your blood. I personally don't advise people to use coconut oil, I generally use olive oil and very little oil in general, I'm not too too familiar with the right oils to recommend but my understanding is that cold pressed oils are better with higher smoke points, I need to do more research regarding that.
I know you're not retarded because you just gave me a breakdown of the mechanism of the impact of different foods on lipids so please don't say "Some people eat 100 eggs every day and never had any cardiovascular disease", you're insulting both of our intelligence.
However it really is pretty much that simple, just eat a balanced whole food plant based diet, reduce cholesterol and saturated fat intake, be a healthy weight (which is part of a healthy diet) and exercise 30 minutes per day, all cause mortality drops significantly, health events reduce and quality of life improves. I don't know what else to say.
