Fermented vegetables exist in old diets because it's the best way to reduce the toxicity of vegetables, it will produce less gut distress than eating raw or cooked vegetables. They aren't healthy in any way and the gut absolutely doesn't need it, it's just a way for poorer people to consume calories cheaply.

Nah, nitrates are really weak-ass ass carcinogens as ass carcinogens go. They could only be a bit of the story there.
