During COVID lockdown I was staying with her for a while, and she was doing keto at the time to try to lose some weight. She did the same "I'm counting calories but somehow I'm not losing any weight" thing, but being around her all day every day I noticed all the ways she cheated. Yeah, she'd eat 3 healthy meals a day that (mostly) omitted carbs and sugar and probably added up to 1500-2000kcal total, but there was also a ton of snacking and probably a dozen "oh I'll just have a little bit of this" moments every day. Here she was very much adhering to strict meals and complaining about how hard it was to go without carbs and how hungry she was all day, but from what I saw she was stil easily hitting >3500kcal and a non-keto amount of carbs every single day, she was just doing it in ways she counted as negligible and hid from everyone else.
Outside of a select few extreme cases, no one is the exception to thermodynamics.
