I think it’s part what/how they eat, along with more active lifestyle.
More real/fresh ingredients cooked up at the time rather than prepackaged ultra processed foods. The food culture is also built around slowly eating and enjoying these types food. The combo of real foods and slower eating means the stomach signal it is full before overeating. It also leads to less snacking because their meals fill them up. France has similar culture around eating and they tend to be towards the bottom of obesity measures.
For lifestyle, walking around, being outside and social is more common than just driving home and plopping yourself down in front of the tv/computer for the rest of the day.
Also I feel being fat is more taboo in those cultures.

Changing it would require fixing most of the fundamental issues our society has, and it's just not doable in a Democracy. Discouraging electronics use and lazy behavior, encouraging social interaction, cooking skills, exercise and punishing parents who let their children get fat would each be political suicide on their own, let alone in unison. When it comes to long term weight stability there's more depth to this than just counting calories for the rest of your life(it would drive normal people insane), your body is supposed to auto-regulate hunger anyway based on the calories you eat, meaning you shouldnt HAVE to count calories. But certain foods are more satiating than others, and can leave you "full" without providing many calories, while others you can eat all day and still feel empty. Something like dousing everything you eat in olive oil adds calories WITHOUT really satiating you, and sabotages your progress.

Here's a good piece on liquid calories and their satiety by Lyle Mcdonald (an expert on weight loss for fitness models / regular joes, i disagree with him on muscle growth tho), it's an easy read if you are more interested about this and can help you understand the general mindset a bit more, even if it only touches beverages

Also if you just look at the nutrition facts of things you eat you can develop a pretty great idea of the macros and calories of everything you eat with time. I was kinda obsessed with bodybuilding and macros as a teen and having this encyclopedic knowledge of nutrition facts now makes things very easy
