anyway

either research more
or just try one of both for 30 days
if you see any weight loss, great, continue
if not switch to the other one

neither 500kcal deficit nor fasting come with any meaningful health risks (something you should always check before trying and weighing the risks)
so just try

if you hit protein and micronutrient targets and lift weights, you can probably do 1000 calorie deficits with little muscle loss.

Starvation mode is just fat cope, I lost 20lbs in 2 months and I was eating 1200cal a day while still keeping protein up
