I'd eat lab grown meat if it had the same macros as something like chicken breast and it was economically cheaper. That probably isn't happening in my life time though.

In a lab you have way more control over quality of product than current dirty ranches with viruses, contamination, injections of cattle. You probably can also grow the ideal cuts of a steak in a lab, no more need to buy expensive usda prime.

I think it's the right direction and if we grow lab meat efficiently to the point it compares with regular cattle I'd probably start switching.

True! However I think it will taste nothing like real meat and that will be its biggest problem.

Because last I heard is that they only really grow a pile of muscle cells. Which is the main thing that we want obviously, but it tastes like cardboard. Everything else that makes meat taste like meat, they are not trying to grow (yet). So either we will have to eat protein-cardboard* or they will only sell it with a bunch of shitty addatives that we don't want or like.

(*most likely strips of tissue glued together with who-knows-what to make it into a block)

I should have said it tastes like nothing rather than cardboard. cardboard would be much more flavourful than what they will grow in the lab. clean yes, but utterly tasteless, so they will "enrich" it with weird spice mixes and the cheapest available fats and seed oils

It's called transglutaminase, or meat glue, and it's already used extensively. It's a naturally occurring enzyme (both in our bodies and in many foods) that bonds protein molecules. It's often made by fermentation.
You've been eating it in commercial products your entire life. It's been in widespread use since 1990. Even when you think you are getting some grass-fed, straight from the butcher cut of steak, there's a good chance it was doctored a little with TG.
