Chicken thighs my friend. You can boil them and eat them plain and they're tasty just like that.
I just made a giant pot (~20 servings) of chicken soup for less than $25.

This is the most important part. Everything else is up to your preference. I like to use a traditional mirepoix:
>1 pound carrots
>1 whole bunch of celery
>2 yellow onions
And then for extra fun:
>mushrooms
>whole pod of garlic
>potatos, whatever kind you like, enough to thicken the liquid.

Boil chicken, make a very fatty broth. Remove chicken and cook veggies in broth. Remove bones and skin from chicken and put it back in. Boil bones and skin separately to make more schmaltzy broth, pour it in as you go.
I cook it all day so it cooks down to a very tasty vegetable bisque with tons of shredded chicken floating around and lots of that good collagen from the chicken bones.
I make this about every 4-6 weeks, keep it in my freezer and it's great served with mashed potatoes (which i also make in bulk and freeze) and a dollop of plain Greek yogurt.
Tldr don't be a lazy ass who thinks of protein as powders and shakes
