If I cut out caffeine and sugar from my diet but change nothing else will I see an improvement? I have a cuppa every morning and I'm addicted to Pop-Tarts.

you will most likely see a decline in your progress.
Not only will you have to fight off caffeine and sugar addiction and withdrawals but you will have less alertness/focus and lower glycogen levels.

Literally instead of going cold turkey try lowering the intake over few weeks. Also instead of sugar try replacing for fruits and fiber rich carbs because fiber lowers insulin spike.

Cutting out caffeine isn’t going to make much difference unless you are ingesting it past morning/mid-day, in which case it could be compromising your sleep quality. You don’t necessarily need to “cut out” sugar but reducing your intake can potentially help out a lot. You obviously shouldn’t be eating pure junk like Pop-Tarts with any degree of regularity.

Yeah, you will.
I quit both sugar and caffeine 3 or 4 months ago, and I had a hellish two weeks before I adjusted but now that my body is used to it I feel much better, sugar is basically a slow burn poison if it's not from fruit and you should get rid of it in any case, it causes inflammation and bloats you up
Caffeine is just a classic addiction, once you detox from it you'll feel the same as you do now when you drink it, in any case quitting it can only do you good because it narrows your blood vessels and restricts blood flow and can also fuck with your sleep even if you drink it in the morning, not to mention the cortisol
Besides, when you don't drink coffee regularly, a day will come when you really need one, and then even a smaller dose than you consume now is gonna hit you like a sledgehammer when you really need it to

TLDR yeah quit both you will see and improvement
