It's not, I got from 20% bf to 12% in 2 months or less.
This is how I did it, high protein/medium carbs/low ish (enough) fat to keep ur hormones in check, no cheat days or goyslop, just healthy food.
Lift and do cardio 6x a week, that shit is easy.

Yes it took me 2 months, I ate the same things everyday, oats, skim milk, fruits, lots of chicken, eggs, rice/tapioca and broccoli, 0 cheat days, I was eating every 3 hours clocked like a pro bodybuilder in prep.
Lifting hard 6x a week and doing 30min max incline treadmill everyday, if you want it enough you'll make it happen.

Anyways, the real answer to your question is because if it were easy to get lean your ancestors wouldn’t have done the things they needed to do in order to gather food. Strong food drive is extremely beneficial to a species. The ease at which we get food now is a transformation that happened far too rapidly for evolutionary pressures to even hope to keep up with. If you’re young technology will likely advance in your lifetime enough to where this problem will have various solutions if you’re unable to structure a diet plan that keeps you lean.

How am I supposed to do that shit. My performance goes down the drain three days after I go on deficit and mentally I just can't stand it. Hunger is not an issue, the bad performance during training is what pisses me off.

Tale as old as time. That's why I never suggest people to bulk unless you start as single digit. You need to get your baseline bodyfat to 10-12% and never really go above 15% on your bulks.

When you are in the 20-25% range, you will just look smaller when you cut. You are still fat, still no definition, just smaller. And all your lifts go down. The mental aspect is the hardest. It is so incredibly difficult to trust the process and get down to 10%. You just need to ignore how you look and feel for the next 6+ months but thats easier said than done. You just look like shit and flat but you KNOW that it rebounds quickly. The strength and muscle memory and full glycogen stores come back in weeks or 1-2 month AT MOST. You just need to get your baseline bodyfat down first.
