Bake it yourself. I make mine from spelt and buckwheat flour. It's very satiating, very tasty, richer in nutrients compared to store bought bread and it's also relaxing making bread.

Close but missed, not only ferment it for a long ass time, keep a portion of it like you're doing sourdough.
That's how you maximize the "benefits" and reduce the "shitty" part of it.
Treat it like a pet, feed it daily, fold it a couple of times, keep it refrigerated, watch it grow, take a chunk out 24h to 48h prior whenever you want to make bread.
