What does euthanizing X11 achieve aside from reducing the workload of the developers? How does removing a choice make the life of a user better?

helps the developers save face for the incredibly retarded and inefficient development cycle of wayland. and prevents competition (people forget that they are funded by corporate primarily)

15+ years to get something barely decent, there is litterally no excuse for that. They could've rewritten X 2x in a shorter period of time.

this is what happens when people try to kill one so the other gets better faster
t. uses GNOME3 with Wayland, doesn’t really care, is aware Wayland sucks dick for accessibility and similar

to answer your question more directly:
the less time devs spend dealing with stuff you don’t care about (like X11 support), the more time they can spend on stuff you do care about (like making tiling background wallpaper work again)
