Because theyโ€™re not looking at it for practical use or functionality, the enjoyment is the experience of variety and the process of using different distros.
I did this for a while bouncing between a bunch of stuff from opensuse to freebsd, every flavor of normie Linux on rhel, Debian or arch, even some weird stuff like a Debian fork based around gnustep/windowmaker and haiku.
But I just kinda bored myself out of that hobby and interest and moved on to doing something else with my free time. My few Linux machines now just run whatever ubuntu version, I never update.

Same reason some people just constantly change shit on their pcs or spend a few hundred dollars on custom cables and shit. Itโ€™s not for functionality, itโ€™s for enjoyment.

I didn't even go this far. I first installed ubuntu around 07 because it was clearly babby's first linux which is what I needed. Later on I used mint because I didn't like the ubuntu bloat. When I was installing headless servers I'd use debian (though these days I've started using ubuntu server for work machines which I want up-to-date software packages on).

Because they don't understand what differentiates one distro from the other. I suppose at least some of them are very susceptible to shilling, so they quickly jump to something after reading someone's happy review. This is why I always tell people to use Kubuntu or Mint for however long it takes for them to understand exactly why they might some other distro; it's quitel likely they won't ever get it.

They're all basically the same and all can do the same shit.
Been using arch now for like 15 years or something. Had an arch derivative on an old laptop but it stopped existing so whatever. Just works, does the needful, etc.

It's easier to install a different distro to see what a differently-optimized/configured Linux DE can look and function like than it is to go through every option and install/configure everything yourself. It's test driving different cars before you settle into one, and/or decide you want to DIY build something like X distro but with different utilities or DE or whatever.

Ultimately you're deciding what the starting point should be and what level of customization you want to do. Sure, you could build a car from scratch by smelting your own metal and mining your own copper and aluminum and tanning your own leather and so on but who the fuck has time to do all that shit? You find a distro that's "close enough" and spend at most a few hours configuring/reconfiguring that set of defaults and installing particular tools for your use case and then it gets out of your way to do more creative work.

Sometimes it might even take a couple of weeks or months to decide that you like how X distro handles Y better than Z distro does and you try something else.

Given enough experience with linux, you eventually come to the conclusion that it's about choosing a package manager, DE, and how stable you want your packages to be.

Anyways, I used to distrohop because different distros have given me different results. If the process to get everything working was the only issue I didn't distrohop, but if I saw issues along the way or had to replace my hardware, which also caused a few of those, eventually I resigned.
For instance I used Mint for quite a while, but now I have a cool monitor that can do proper HDR and this and the other, so X11 is a no go and Cinnamon doesn't support that on Wayland. Instead of bothering with installing Plasma on a distro that clearly isn't the best for this purpose, I distrohopped because it was now necessary for me to have as painless an experience as possible. For me the priority is to get as much of my hardware working as good as possible, not having a fully stable distro. Having /home on a separate partition, the process of distrohopping isn't as daunting.

I literally never distrohopped except for my first month of Linux in the early 2010s, when I was a teen, where I went from Ubuntu to Antergos to Arch. I do consider Debian testing at times but I eventually conclude that there's no concrete reason for me to install it.
I did experiment a lot with DEs/WMs though, but I've been on i3 for years.

I'm happy with both, they just werk and are good for everything I need them for. I've never had any issue that required more than 2 minutes of my time.
I don't see why I'd distrohop. Or return to Windows.
The only thing I can see myself doing is trying a WM on my arch laptop, but that's out of sheer curiosity as I'm a noob.

Ubuntu was recommended to me and I used mint in college on a old laptop and once I got more money I moved to more demanding DE followed by settling for tumbleweed for it's ease for setting up rollback and good rolling release
