Do I even need a discrete GPU if I don't even do heavy gaming, 3d modeling, video transcoding/editing & AI bullshit?

Admit it, you're only browsing the web.
Joking aside integrated gpus are pretty capable these days.
I could even emulate some switch games at 30 fps on my old i5-6500 and that igpu is ancient.

Do you want to hook up more than 3 screens? If no the answer is no. 99% of users are covered by the iGPU on whatever CPU they happen to have. Once you get into multi-monitor autism hardcore though they are helpful. But an iGPU can do the average 2 screen thing just fine.

I mainly use my GPU for multiple monitors and the odd video filter I don't want to run on CPU. LLMs aren't really useful and I don't need them beyond wanting to generate images for the lulz. Talking to an LLM all day is madness which shouldn't be encouraged. My GPU is now over a decade old and it still runs any game I want to play. It's overkill for most games I play anyway since I mainly only play fightan games or emulate old consoles. But even Switch games don't come close to maxing it out. I haven't played any AAA shit in a long time. But the last time I did around 2020 I could still run everything at max settings with plenty to spare. None of these games have updated their 3D engines in like 15 years so there is no point in buying a beefy GPU to run them.

Define "Heavy gaming", but assuming your CPU is new enough, the iGPU either supports new codecs or is fast enough to do software decoding, so it then becomes a matter of whether or not you use multiple monitors

Assuming you watch videos/streams and your iGPU has hardware av1 decoding then no.
