Does anyone ever do any tinkering on Chromium or is that just a Firefox thing? Because I really enjoy changing stuff and I found some changes very useful.

Not really need to do a lot of tinkering when there are that many popular forks. Firefox is starting to with Zen and Floorp.
And like ricing, few people like to tinker with things.

Chromium's about:flags are quite limited compared to Firefox's about:config as well. But you can change settings for forks, it's not like you're forced to use the defaults, about:flags is still available. I'm not sure about userChrome.css though, I've never used it.

Chrome browsers use manifest v3 which is google telemetry spyware that disables the ability to disable finger printing. Avoid Chrome and manifest v3 based browsers at all cost.

I use Firefox as my main, but a Chromium backup is a necessity, unfortunately. Some sites simply refuse to work properly on Firefox. And I don't even mean the Google ones that are sabotaging Firefox with longer load times and the like.
