There are some similar articles about cars recording you.
But this is a strange article, the headline is about screenshots of the screen itself, but then the text just casually drops "it also records audio", which is worse.
Anyway, I guess just take out the camera (so it doesn't record you) and microphone. There's not much you can do about screenshots. Set up a guest network or don't connect it to the internet at all is another option.
