>Let you install custom ROMs (Google Pixel/Xiaomi/older Samsung)
Just get an Android. The google tracking can be turned off and Play services removed completely.

I like the hardware a lot, and I'm likely to not use anything more than calls, texts, and emails.

There is a reason for google integrations in apps. For the features like push notifications. What is apples alternative? I am pretty sure it also (at least at some point) just used google.
