The difference is I don't have to "patch" or do anything special to Linux to get it to run well. SteamOS is a pretty barebones arch install with KDE and Steam. Show me this ultra optimized Windows edition where I don't need to do all that tinkertranny crap.

That's a good point. You can get higher framerates just by installing SteamOS, without tinkering. But disabling these features are a matter of clicking through a view menus on Windows and using DXVK, it's not on the level of tinkertranny Linux patching.

I doubt defender is the problem. It takes half a second for the right click menu to show up in most cases. You're running a browser in your start menu. You have an overengineered compositor trying to render 5 different toolkits. You have copilot running on standby 24/7.
Windows has clearly lost the plot to anyone tech literate. It's barely functional even for normie tasks. This should have been clear back in 10 when most people where cracking LTSC installs. I really do tinker less on Linux than I would trying to make Windows bearable enough to use as a daily driver. I'd buy a Mac before ever installing Windows 11. And of course, there's no excuse that games run faster on Linux through Proton, literally emulating a Windows platform under Linux. Back in Windows 7 doing the same was at least a 25% performance decrease.
