I got a Define 7 for my NAS (per the /g/ wiki's recs) for ~50% off during black friday and it is very solid. I don't really like how the hard drive bays are only supported on 3 corners, but it seems to be working fine.

Depends on the region. Buy whatever is cheaper and has good airflow. I'm using a Lian Li Lancool 205m. Got it for 58.95€.

Fir an air cooled build the lancool 207 is pretty good and dirt cheap. For watercooling I think the phanteks xt view might be nice.

Both are small, easy to build in, can hold an atx motherboard, have good thermals and are cheap.

I got the metal panel version for my ZERO LRGB workstation build.
I can recommend this case for 16-cores with 420 radiator in top. Even ALF3 fits perfectly with a small easy mod of the cover.

Not really, no. A be quiet! case is your best bet. Not many silent cases made due to lack of demand, inefficiency, and only use case being sound sensitivity. Better off getting a high airflow case and using a silent fan profile in BIOS. Silent cases are a very VERY bad idea, unless you genuinely need one for medial reasons or whatever. Very bad idea.

I'm not familiar with the full size ATX version of the case, I assume it has better mounting options desu. I use the mATX version for a windows XP build and just used laptop drives mounted to the rear of the motherboard tray- I believe this is the same mounting system as their other mATX cases. Looks like the ATX version can mount one 3.5'' hard drive below the 5.25'' optical drive, with the XL version offering one (or two?) more drive mounts in the "cable management" routing thing. Overall I really liked building in the case, and I don't usually go for more than two drives anyway, I've got other options for bulk data storage.
