Pretty sure when you delete the account the messages will just say "deleted user" or some shit. Whether or not Discord keeps info on who said deleted user was in another story.
There's a script that will go and delete these messages for you, though apparently it takes a while, but, just like before, whether or not Discord still keeps the data is another question.

Anyone who wrote down your user ID before you closed your account can associate your messages with you even after anonymization. But because private messages threads are tied to your user ID (despite the display name changing to "deleted user"), if you've ever doxxed yourself in a direct message by mentioning, say, your steam username, anyone with access to the messages can retroactively infer your identity and correlate it with all your other messages. In other words discord's anonymization is insufficient and hasn't ever worked.

Would they even actually delete your messages if you asked them to? According to the GDPR they probably should, but whether they will actually do it is another story. They will probably claim that deleting your account and leaving the messages is enough, and until one of the data protection agencies in the EU starts pressuring them they probably won't bother doing anything about it.

It was documented about a year and a half ago that if you send them a txt file with a list of message IDs with a GDPR deletion request, they will do it.
Unfortunately this process went viral and people created scripts and message templates, so they started cracking down on it and changed the required format from .txt to .csv, and started denying requests arbitrarily
It might not work anymore

GDPR does not cover your messages, the requirement is anonymization, they are not required to delete them even if you submit a request

there's undiscord. I delete my messages once a month so if I'm ever banned for whatever most people could track/snoop through is up to a month. Also it's a pain in the ass when theres 5 gorillion messages to go through so doing this periodically solves that issue
