As we all know, MS is about to take a dump straight on our heads and make many perfectly usable Win 10 computers an un-secure nightmare that can't get Win 11+security updates

Therefore, either I throw away a ton of useful computers, or I put Linux on them.

I'm looking for the right version of Linux to do the following:
-Run in Desktop mode (I don't like the "big picture" and "front end" modes for this use case)
-Good security updates with no likely end in sight
-Support for Nvidia graphics cards and various game launchers (esp. Steam but also Epic, EA, etc) as turn key as possible
-Good "Windows" peripheral supports i.e. not super picky for one type of wi-fi adapter and things like that.
-Runs normal Windows Desktop-style browsers with multi-tab, etc. (I imagine most can, but just stating it). My main use case for this computer is going to be 20 or so youtube tabs with videos I queue up and watch while I eat lunch/dinner. Secondarily, various stream sites like Pluto TV or straight up bootleg video sites.

My research has led me to Bazzite as the top choice with Pop! OS as a second place.

Any good reason not to go Bazzite for this application?

Bazzite sounds good.
Avoid: arch (don't fall for the meme), Linux mint (gaming is not as easy to set up), Ubuntu (dogshit distro all around), manjaro (same as Ubuntu).
Pop OS is based on Ubuntu, so avoid that one as well. Dont fall for its nvidia ISO, it's not really a selling point.
My recommendation would be CachyOS, but bazzite seems better for your use case

I would have recommended Bazzite before you even said it. Second choice would be to use regular Fedora or OpenSUSE and configure it yourself for gaming.

Not true. If your computer is at least a mid-range machine from sandy bridge or newer, you can bypass hardware requirements (and all the other faggotry) in a few different ways, with rufus being probably the easiest route.

Regardless, just because a windows version is not supported by shitskinsoft, it doesnt mean its insecure. Your computer is most likely firewalled by default by your ISPs router, so noone can hack it remotely even if remote RCE pops out. There are multiple people on this board still using XP just fine. You will probably be better with bypassing the requirements of windows 11, switching to 10 ltsc or just not updating at all. No idea why would you bother with objectively inferior operating system like linux.

If you really insist on using those, be my guest. As for linux distros they are supposed to be "just werks" tier. I have some experience with Pop and never had any major issues, even on alpha. But remember that you will have to learn entirely new operating system with poor software selection, RTFM culture and very pathetic community.
