I'm currently working for a mobile game indie studio team (I'm a pixel artist) using my Lenovo Thinkcentre M73. Love this little guy. Can handle my assets just fine.

NUCs haven't gone anywhere, they're just made by ASUS now.
Mini PCs as a concept certainly haven't gone anywhere, there are many other manufacturers crNking them out and AMD has several compelling chips suited for these applications as well.
OP is a fag.

I'm still running home assistant on a nuc since 2019 and it was used one even then..
My other 'mini server' is an asus pn51 (Ryzen 5 5500U 16GB) mostly for running dockers

Are Minisforum PCs any good? The spec sheets for most machines look more than good enough for what I have in mind but how's the build quality, etc?

FUCK those things. On mine, the controller on the board connecting the HDD to the rest of the system had voltage problems, which would cause the drive to freeze and the whole system to freeze. What a SHITBOX.

I have several that were being surplus'd out at work i installed Batocera on several and use them for emulation. I have a gen 12 that I installed windows 10 on, I use that one for running lighter windows games like Skullgirls, Xemu for OG xbox emulation, and Steam games. It runs Halo: MCC just fine at 1080P.

I have one set aside that I'm going to run with an NVME to SATA x 4 adapter for a media server.

They are good for some stuff but not really worth buying for more than 20~30USD. More powerful than a Raspberry pi, at least.

I want one but I dunno what to get. Many of them seem to have cooling issues. Minisforum has been heavily shilled on youtube making it hard to find reliable info.
I was tempted by the asrock deskmini X600, but apparently it had a bug causing random nvme data corruption. It was fixed in a bios update but what the fuck else is wrong with this thing if they shipped a bug that bad?

Leaning towards a custom miniITX build with a picoPSU and an aliexpress case like pic related. More work, more expensive, but standard parts and probably better cooling.
