you don't get the latest fixes, features, etc.

for example many graphics issues are windows related (dwm.exe, wddm, etc) these need to be updated.

your ssd is also slower if you're not on latest stornvme.sys

If you want to disable updates because you hate when MS changes shit, just install an LTSC release instead: You only get security updates so nothing ever changes or breaks
