I'm considering returning to college, and it would be online. I have the options of IT, computer science, and cybersecurity as my degree paths. With all the drama of AI replacing white collared jobs, I rationalized that IT would be the safest pick since you'll always need monkeys to make the infrastructure tick in the backend. Would you say that was an accurate assessment?

Cybersecurity and ONLY because of the three that degree seems to be the only one that’s required. Cybersecurity people are weirdly cliquey and seem themselves as distinct from IT even though lots of IT people know about and are certified in cybersecurity as well. College might help you get internships that will get you government clearance and an in to the Infosec world. If you decide on IT or CS later you can always pivot.
