It's more than just the programming language, there are programming patterns, IDEs, build tools, and package managers that you need to learn how to use professionally.
Notice the above doesn't even include the core part "tech you want to focus on", which you learn alongside the above.

Who, outside of high school students, learns just Java and nothing else? If you already know programming fundamentals Java takes like 5 minutes to understand. No one uses Java because they just love Java. You use Java because you want to use something else that's written in Java or only has Java bindings.

Once you get a bit of professional experience in software, you'll be able to easily switch from one language to the next.

If you are thinking of specialising in Java, then take a look a the sort of places that are hiring people who specifically have Java experience. You'll find they are usually boring, corporate and jeetified. If that's your piece of cake then go for it.

You can easily switch because every popular language has C-style syntax.
Maybe at FAGMAN you can go quite far with only algo knowledge, but for other places you won't be able to easily change technology without a pay-cut. In my experience most places ask extremely detailed question about their chosen language and stack.

I'm responsible for hiring at my company and I usually give people a programming test. But in the test I'm looking to see if they know how to program and if their code is well organised and does what it's supposed to do. If people did obscure syntactical sugar stuff in the test it probably wouldn't impress me.

Yeah, I think it makes little sense to ask about things you can easily google.
On the other hand I also think that by doing live-coding you're filtering for a specific kind of person that behaves well under stress. The process tells you very little about how the candidate will perform in real work environment.

A place where I worked back in the day invited people into the office to do the programming test, sitting with the rest of the team, and they deliberately had a couple of things (such as the database connection details) that the candidate would need to ask questions about, so that we could see if they were the sort of person that would ask for help when they got stuck, or if they would try to do everything on their own like a a socially deprived incel.

Java is very fast but it's a memory hog. It's verbose but it improved slightly in recent years.
Javascript is literally one of the worst designed languages ever. I don't know bun but node is also up there when it comes to having the shittiest package manager (npm) and a horrible runtime for doing any concurrent type of work.
